Ingredients:

  • 3 tablespoons olive oil
  • 1 teaspoon of dried oregano or thyme
  • 1⁄2 teaspoon rosemary
  • 1 teaspoons of minced garlic
  • 1⁄2 teaspoon of salt
  • 1⁄2 teaspoon of black pepper
  • 1 red onion
  • 6 small red potatoes
  • 1 red bell pepper
  • 6 ounces button mushrooms
  • 1 medium zucchini
  • Mozzarella cheese and parsley leaves

Directions:

1To start, preheat an oven to high heat for about 450 degrees Fahrenheit or 232 degree Celsius. Prepare a large baking sheet and line them with baking paper or aluminum foil. Set aside. After that, prepare red potatoes (remove from the dirty skin), bell pepper (don’t forget to remove the seed on it with a sharp knife), button mushrooms and cut them all into small pieces and put all the ingredients in a large bowl.

2Combine all the vegetables in a large bowl with salt, garlic, and black pepper and don’t forget to stir and mix them all with a bit salt and pepper (if you have to). Don’t forget to add one tablespoon of olive oil to make the ingredients tastier. Then, spread all the parts evenly on a baking sheet that you have already prepared before.
