- 1 lb ground turkey, choose the 93% lean meat for healthy recipe
- 1 ½ cups of cooked brown rice
- ¼ cup of tomato sauce
- 1 cup of chicken broth, use fat free chicken meat to make it
- 3 large sweet bell peppers, wash them before cooking
- 1 teaspoon of kosher salt
- 1 teaspoon of cumin powder
- 1 teaspoon of garlic powder
- 1 tablespoon of chopped cilantro, parsley is a good alternative
- ¼ onion, mince it
- 1 garlic, mince it
- 6 tablespoons of shredded cheddar cheese, choose the part skim one
- Olive oil cooking spray
1Pre heat the oven to 400° Fahrenheit. Take a medium non sticky skillet and layer with the cooking spray. Heat the skillet over a medium heat. When your skillet is hot enough, toss in the cilantro and garlic. Sauté until the garlic releases fragrance and it turns to brown a little.
2Add the ground turkey. Season with cumin powder, garlic powder, and salt. Cook and stir for around 4 to 5 minutes or until the turkey meat is cooked throughout. Add the ¼ cup of tomato sauce and stir. When it is well mixed, pour ½ cup of the chicken broth in and stir again. When everything is well mixed, turn the heat to low and simmer everything for another 5 minutes.
3Remove the turkey from the heat and set aside. Take the cooked rice and toss it in the skillet. Stir well to mix them all. Set aside. Take the bell peppers and cut them into half in lengthwise. Using a spoon, remove all the seeds, leaving the bell peppers empty and clean. Set aside.
4Prepare a large baking dish, and get ready to fill the bell peppers. Take ⅔ cup f the turkey mixture into each of the bell pepper halves. Top each of them with the shredded cheddar cheese. Place the bell peppers halves in the baking dish and give them a little distance to breath.
5Pour the remaining chicken broth into the baking dish and cover the dish with aluminum foil. Transfer the dish into the oven and bake for around 45 minutes or until the bell pepper halves are soft enough and the cheese is melting.
6Take out the baking dish from the oven and remove the foil carefully. Leave it for a while so it turns warmer. When it is warm enough, transfer the bell peppers into a serving plate, and serve immediately with your favorite salad.
